Choc-Strawberry Parfait

Gluten Free, Lactose Free option**, Low FODMAP, Vegetarian, Onion and Garlic Free

A traditional parfait is a dessert usually containing whipped cream, eggs, and layers of fruit though throughout history has been re-imagined time and time again, with each region having their own twist on the French classic now. The UK do it differently to Japan, who do it very differently to the USA. I view a parfait as a rich layered dessert containing a rich element, a fluffy element, and a layer or two of fruit. Based on that mind-set, this version fits the mold for me in a low FODMAP way. Serving in a coupe glass just brings an element of class to this rich dessert, and helps with keep you stick to the correct portioning.

Ingredients

Instructions

  1. In a shallow coupe glass, evenly layer first your macerated strawberries, then then crumbled brownie.
  2. Dollop the yoghurt on top and smooth evenly across the glass creating your third layer.
  3. Decorate with a few pieces of fresh strawberry and edible flowers then serve immediately. The desserts can be refrigerated for a few hours prior to serving if needed.

Notes

*as long as its low FODMAP, you could use your favorite chocolate biscuit or even cake/sponge in lieu of brownie.

**if you are uncomfortable with lactose completely, try swapping for a lactose free yoghurt instead.
