Leftover Brownie Truffles

Leftover brownie? What even is that? Well, if you find yourself having recently made something along the lines of my Brownie Lasagna where you would find yourself cutting shapes with cookie cutters out of a sheet of brownie… you may find yourself with a leftover brownie situation. Never fear though! Because I have you covered with a decadently rich, adult treat. Honestly these are so good, and so simple, you may find yourself making brownies just to make these! I wouldn’t fault you.

Low FODMAP serving 2 pieces

Ingredients

  • 200g leftover Brownie pieces (I have used Bob's Red Mill GF Brownie Mix)
  • 30g lactose free firm cream cheese
  • 1 tsp Spiced Rum (or quality whiskey of choice)
  • Desiccated Coconut to coat

Instructions

  1. In a medium sized bowl, crumble the brownie leftovers as much as you can. This is a job for your hands!
  2. Pour over the rum, and flake through the cream cheese.
  3. Using your hands, knead until well combined and a dough forms.
  4. Tear off pieces of the dough and form firm round balls.
  5. Coat the balls in desiccated coconut and refrigerate for at least an hour to let them firm up.

Notes

Try dipping them in melted dark chocolate or adding in a handful of crushed nuts for an extra special treat! Don't forget to adjust the Low FODMAP serving accordingly.

This recipe is also a good way to use up brownie that is starting to get a bit old and dry out... a great way to use up leftovers!
