Frozen Margarita Jellies

Gluten Free, Lactose Free, Low FODMAP, No Onion or Garlic

You simply can’t beat a frozen margarita on a hot summers day in the sunshine… well you can but hear me out here! Frozen Jello has been all the range at the moment, and for good reason. It’s ah-may-zing. So when putting together a margarita jelly recipe I had a stroke on inspiration and decided to chuck them in the freezer. Life changing moment… enjoy!

2 Ingredient Frozen Margarita Jelly

Ingredients

  • 500ml liquid margarita cocktail mixer (I use Good Cocktail Co)
  • 2 tsp gelatine powder
  • 2 TBSP cold water
  • Fresh mint to garnish (optional)

Instructions

  1. Sprinkle the gelatine in the water and whisk with a fork. leave to stand for about 1 min.
  2. Melt mix in the microwave in 10 second increments (making sure not to boil) until gelatine powder is completely dissolved. Leave to cool slightly.
  3. Pour the cocktail mix into a large jug, and using a spatula add the gelatine mixture stirring it in really well. (try using a spatula here)
  4. Pour into silicon ice molds and garnish with finely chopped fresh mint.
  5. Pop in the freezer overnight or until completely frozen. *

Notes

*you don't have to freeze! for plain margarita jelly, just stick it in the fridge overnight instead.


When serving, let them thaw a tiny bit and break it up into bite sized chunks and eat with a spoon!
