It’s ah-may-zing. So when putting together a margarita jelly recipe I had a stroke on inspiration and decided to chuck them in the freezer. Life changing moment… enjoy!

- 2 TBSP cold water
- Fresh mint to garnish (optional)
Instructions
- Sprinkle the gelatine in the water and whisk with a fork. leave to stand for about 1 min.
- Melt mix in the microwave in 10 second increments (making sure not to boil) until gelatine powder is completely dissolved. Leave to cool slightly.
- Pour the cocktail mix into a large jug, and using a spatula add the gelatine mixture stirring it in really well. (try using a spatula here)
- Pour into silicon ice molds and garnish with finely chopped fresh mint.
- Pop in the freezer overnight or until completely frozen. *
Notes
*you don't have to freeze! for plain margarita jelly, just stick it in the fridge overnight instead.
When serving, let them thaw a tiny bit and break it up into bite sized chunks and eat with a spoon!
