Dark Choc Fig Bites

Gluten Free, Vegetarian, Low FODMAP serving avail, No Onion or Garlic

Scenario: you’ve been gifted some figs. What do you do with them? You’ve heard of wrapping them in bacon and stuffing with cheese, but you can’t eat pork. Chucking them in a salad seems a little bit of a waste given how uncommon they are in your country. An idea forms.

This was the exact situation I was faced with when a family member gifted us a handful of beautiful large figs. this recipe was one of my solutions! This was received really well across all my social platforms, and I hope you love it as much as I do!

Ingredients

  • 1 Large Fig
  • 50g Dark Chocolate
  • 1/4 tsp coconut oil
  • freshly ground sea salt (optional)

Instructions

  1. Cut the fig into 8 slices (quarter the fig then halve those slices).
  2. Melt your dark chocolate and coconut oil together over a water bath.
  3. Once melted and smooth, take off the heat and dip your fig slices. Dip only 1/2-3/4 per slice so you have a little handle, making sure you coast both sides of the slice well.
  4. Pop onto a plate covered in baking paper and sprinkle lightly with the sea salt (if you wish).
  5. Refrigerate for about an hour. Store in an airtight container in the fridge for 3-4 days.

Notes

You can coat the fig slices entirely in chocolate if that's your thing, just melt more dark chocolate - 60g per 1 fig as above.
