Zucchini Pizza Bites

Gluten Free, Lactose Free, Low FODMAP, No Onion or Garlic, Vegetarian, Vegan

These Zucchini (courgette) pizza bites are so quick and easy to make and a brilliant snack to have in your toolbox. Not only are they light and healthy, but they use up the summer glut from the vegetable garden, and they taste amazing catering for multiple dietary requirements. Perfect size for little hands and big kids alike!

Ingredients

  • large zucchini
  • tomato paste
  • dried Italian herbs (I have used home-dried oregano)
  • vegan cheese*, finely grated

Instructions

  1. Pre-heat oven to 200C fanbake and prepare a baking tray with a layer of baking paper.
  2. Slice the Zucchini into 1/4 inch rounds and place on the baking tray.
  3. Top with a little tomato paste, a sprinkle of the dried herbs, and the cheese.
  4. Bake for 10-15 minutes in the preheated oven.
  5. Serve immediately topped with a crack of fresh pepper.

Notes

*For a non-vegan option, just use normal cheese! It works just as well. For an extra treat try using mozarella!!
