No Bake Collagen Bars

Gluten Free, Lactose Free Option, Low FODMAP.

When I received the opportunity to work with Adashiko to develop some recipes for them I was over the moon. This recipe was the first thing that sprung to mind! I wanted to start by providing a recipe that suited multiple dietary requirements, was easy to throw together, and versatile. These are great as a snack, post workout treat, in the lunchbox, or shared with friends. I absolutely love this recipe, and hope you do too!

No Bake Collagen Bars

Ingredients

Bar Base
  • 3/4 Cup almond meal
  • 1/4 Cup Adashiko Pure collagen powder*
  • 1/2 Cup smooth no added salt peanut butter
  • 1/4 Cup maple syrup
  • 1/2 tsp good quality vanilla extract
  • 20g dark eating chocolate, chopped roughly
Ganache Topping
  • 100g dark eating chocolate
  • 1 tsp coconut oil
  • 2 TBSP milk**

Instructions

  1. Prepare a standard sized loaf tin by lining it with baking paper. Set aside.
  2. Combine all ingredients for the bar base together in a medium sized bowl until well combined.
  3. Press into the pre-prepared loaf tin, smoothing out as evenly as possible.
  4. Pop the base in the refrigerator so it can begin firming up whilst you prepare the topping.
  5. In a small saucepan combine all ingredients listed for the ganache topping.
  6. Gently melt together over a medium high heat stirring frequently. Once the chocolate melts, the ganache should combine very quickly. Take it off the heat and keep stirring for 30 seconds to combine the milk into the chocolate and bind the ganache. It should be completely glossy and smooth.
  7. Grab the base out of the fridge and pour the topping over, smoothing out evenly.
  8. Cover and place in the refrigerator overnight to set, or in the freezer for minimum 1 hour if you are in a rush or can't wait!
  9. Once set, lift from the loaf tin by the baking paper onto a solid chopping board. Using a sharp knife*** slice into 8 bars, or 16 portions.
  10. Store in the refrigerator for up to 5 days in an airtight container.

*note one serving does not give you your complete recommended daily dose of Adashiko Collagen


**for a Low FODMAP/Lactose Free option, swap out for your choice of milk such as lactose free or oat.


***slightly heat your knife by running under hot water prior to slicing up the bars and wipe between cuts to ensure a nice sharp cut.
