Matcha Mug Cake

The Mug Cake. A quintessential go-to comfort food and snack, because ultimately cake just makes everything better. Matcha makes for a really lovely delicate umami cake flavor, that I highly recommend serving with lashings of your chosen yoghurt and strawberries.

Ingredients
- 1 tsp Matcha Powder (preferably culinary grade)
- 1/4 Cup milk
- 5 TBSP Bob's Red Mill 1:1 Gluten Free Baking Flour
- 1 TBSP brown sugar
- 1/2 tsp baking powder
- 1 tsp canola oil
- toppings of your choice to serve such as coconut yoghurt, fresh chopped strawberries or frozen fruit
Instructions
- In your microwave safe mug/ramekin mix together flour, brown sugar, baking powder,
- In a separate jug/small bowl whisk your matcha and milk together.
- Add the wet mix and oil to your mug.
- Whisk together well ensuring there are absolutely no lumps in the batter.
- Microwave for 1.20 minutes, leaving to stand in the microwave for a few minutes once done to set.
- Top with your toppings of choice and enjoy!
Notes
*for a vegan option, swap out the milk for almond milk and serve with a vegan friendly yoghurt such as coconut.
