Matcha Mug Cake

The Mug Cake. A quintessential go-to comfort food and snack, because ultimately cake just makes everything better. Matcha makes for a really lovely delicate umami cake flavor, that I highly recommend serving with lashings of your chosen yoghurt and strawberries.

Ingredients

  • 1 tsp Matcha Powder (preferably culinary grade)
  • 1/4 Cup milk
  • 5 TBSP Bob's Red Mill 1:1 Gluten Free Baking Flour
  • 1 TBSP brown sugar
  • 1/2 tsp baking powder
  • 1 tsp canola oil
  • toppings of your choice to serve such as coconut yoghurt, fresh chopped strawberries or frozen fruit

Instructions

  1. In your microwave safe mug/ramekin mix together flour, brown sugar, baking powder,
  2. In a separate jug/small bowl whisk your matcha and milk together.
  3. Add the wet mix and oil to your mug.
  4. Whisk together well ensuring there are absolutely no lumps in the batter.
  5. Microwave for 1.20 minutes, leaving to stand in the microwave for a few minutes once done to set.
  6. Top with your toppings of choice and enjoy!

Notes

*for a vegan option, swap out the milk for almond milk and serve with a vegan friendly yoghurt such as coconut.
