Pomegranate Bark

This pomegranate bark is extremely more-ish, and a showstopper at any nibbles station. The sweet juicy arils burst in the mouth and compliment the bitterness of a good dark chocolate perfectly. Great for any time of the year, and makes a very special homemade gift.

Ingredients
- 250g dark chocolate
- 1 tsp coconut oil
- 80g pomegranate arils/seeds
- handful crushed walnuts
Instructions
- Line a brownie tin with baking paper and place the pomegranate arils evenly over the base.
- Melt together the dark chocolate and coconut oil in a glass bowl over a boiling pot of water.
- Pour over the melted chocolate mixture, smoothing out with a spatula nice and thin and even.
- Evenly sprinkle over the crushed walnuts.
- Place in the refrigerator for a minimum of 2 hours to set.
- Once fully set, lift out the baking paper and peel back. Cut into even pieces using a sharp, heavy knife trimming off the edges to create nice sharp edges, if you wish. Alternatively, simply crack into shards of differing sizes!
- Store in the refrigerator in an airtight container - consume within 6 days.
