Festive Yoghurt Bark

Gluten Free, Lactose Free, Low FODMAP, Vegetarian, Onion and Garlic Free

This festive themed yoghurt bark is the perfect fruity sweet treat for those hot summer days when you are craving fruit yoghurt icecream. Added bonus is that its relatively Low in sugar, so perfect for all ages.

Ingredients

  • 750g tub of Lactose Free yoghurt
  • 1/2 mix of my Macerated Strawberries recipe
  • 1 tsp desiccated coconut
  • 1 tsp finely grated dark chocolate

Instructions

  1. Line a 12x8inch brownie tin with brown baking paper.
  2. Pour in the yoghurt. Add drops of the macerated strawberry mixture over the top and swirl using a chopstick or skewer.
  3. Sprinkle the coconut and chocolate evenly over the top of the entire tray.
  4. Cover with cling film and pop into the freezer. Leave overnight or 4 hours absolute minimum. The mixture needs to be completely frozen through.
  5. In the morning, remove from the freezer and discard the cling film. Using a sharp, heavy knife* cut into pieces, and the bark should easily pop into the shapes you have cut when you pull out by the brown baking paper.
  6. Store loose in a freezer-safe container in the freezer until ready to use.

Notes

* You may wish to warm the knife in hot water to make this easier. I find I don’t always need to... especially when the weather is warm!
