Chocolate Mousse Slice
Gluten Free, Lactose Free, Low FODMAP, Vegetarian, Onion and Garlic Free
This sweet, chocolatey slice is super easy and is prepared in advance. Using existing products to cheat… people will be asking you for your secret recipe!
Chocolate Mousse Slice
Yield: 10 slices
Low FODMAP portion 2 slices
Ingredients
- 1 Cup Low FODMAP mousse, unset (I use Aeroplane creamy mousse mix)
- 1 brownie sheet approx 1.5cm thick, loaf tin sized, cooked and cooled (I use Bobs Red Mill Gluten Free brownie mix)
- 250g fresh strawberries
- 1 tsp Dark Chocolate, grated fine
- edible flowers to decorate (optional)
Instructions
- Top your Strawberries, leaving any smaller ones whole (these will be placed pointy side up), and slicing up any bigger ones. You want these to be relatively evenly sized in terms on height to ensure the mousse completely covers them all. I aim for no higher than 2cm.
- Line a standard sized loaf tin with baking paper, ensuring there is a good 10cm of paper up the sides. Cut triangles out in the corners to make the paper sit in the loaf tine easier. Pop the brownie sheet inside. Ideally you would have cooked the brownie in this pan so it should nestle in perfectly.
- Cover the brownie with the strawberries, pointy tops/round edges up.
- Evenly pour the mousse mixture over the strawberries, flattening the top out. The strawberries should be completely covered.
- Leave in the refrigerator overnight to set.
- the following day, using the brown paper excess, gently lift the slice out onto a chopping board. Peel back the sides of the baking paper to gain access to the slice. With a warm, sharp knife* cut the slice into 10 pieces**.
- Decorate by sprinkling over the grated dark chocolate and edible flowers.
- Make sure the slice remains as cold as possible at all times. I like to pop in the freezer before serving so they are nice and firm and don’t fall to bits.
Notes
This recipe is very easily doubled for a higher yield.
*Warm the knife by using hot water straight from the kitchen tap. Pop the hot water into a container and leave the knife in there to conserve water instead of letting the tap run.
**Try chopping into 20 pieces for petit four/bite sized pieces!
