Raspberry White Chocolate Matcha Blondie
Gluten Free, Low FODMAP, No Onion or Garlic, Vegetarian.
Please make this. I have been making this on repeat for weeks now, and its the perfect snack or after dinner treat. I have even been known to snaffle some down for breakfast when running late! Due to the addition of brown sugar, the edges caramelize and you’ll be fighting for the corner pieces!
I make these thinner, but go fold gold if you enjoy them a bit thicker! See notes section.
Raspberry White Chocolate Matcha Blondie

Ingredients
- 55g white chocolate chips
- 75g melted butter
- 2 eggs
- 50g brown sugar
- 150 g white sugar
- 1 tsp vanilla extract
- 120g Bob's Red Mill 1:1 Gluten Free Baking Flour
- 1 tsp xanthan gum
- 2 TBSP matcha powder
- additional 3 TBSP white chocolate chips
- 1/4 Cup frozen raspberries
Instructions
- Preheat oven to 180C fan bake. Line/grease a brownie tin and set aside.
- To your melted butter add the first measure of white chocolate chips and stir until fully combined/melted. You may need to pop in the microwave in 10 second increments on a medium power. Set mixture aside.
- To a large bowl add ingredients 3-6, and whisk using an electric beater (or stand mixer) until light and fluffy.
- Add the melted chocolate mixture to the bowl. Then add ingredients 7-9 and gently fold everything in. Be careful not to over mix.
- Add the last measure of white chocolate chip and the frozen raspberries and fold until JUST combined.
- Spoon blondie mixture into the prepared lined/greased brownie pan and bake for 20-25 minutes.
- Once cooked, let it sit for 5 minutes and then pop onto a cooling rack. Once completely cooled, transfer to a cutting board and slice into 12 pieces (based on an 8x12 inch brownie pan). Store in an airtight container at an ambient temperature.
Notes
I enjoy a thinner blondie - if you want these thicker try a 9x9 inch pan instead.
If you are not using the flour specified, add 1/2 tsp more Xanthan gum.
