Tiramisu Yoghurt Bark
Gluten Free, Low FODMAP, Vegetarian, Onion and Garlic Free
The dessert I have truly 100% missed on my gut health journey is Tiramisu. The pillowy, decadent goodness that in my opinion is the most perfect dessert ever constructed by man (other than a cheese board served with port). I had this idea mulling around in my head for months before deciding it was time to actually give it a go… and OMG it came out so much better than I expected! It definitely hits that craving and is perfect for any time of the day... especially in summer.
Tiramisu Yoghurt Bark
Ingredients
- 750g tub of Lactose Free yoghurt
- 1/2 Cup Dark Chocolate, roughly chopped
- 4 oz shot strong decaf coffee, cooled *
- 3 x Schar Savoiardi (Gluten Free Lady Fingers)
- additional coffee grounds to top (ground beans/plunger style are best)
Instructions
- Brew your shot of coffee and let cool.
- In a small bowl, crumble the lady finger very roughly leaving some chunky pieces and pour over the coffee shot. mix together until all the coffee is absorbed and the lady fingers are fully coated. Set mixture aside.
- Line a 12x8inch brownie tin with brown baking paper.
- Pour in the yoghurt and smooth out evenly.
- Sprinkle the chopped chocolate and biscuit mixture evenly over the yoghurt.
- Swirl through the fillings with a chopstick or similar trying to cover most of the filling with yoghurt.
- Sprinkle a thin layer of coffee ground over the top.
- Cover with cling film and pop into the freezer. Leave overnight or 4 hours absolute minimum. The mixture needs to be completely frozen through.
- In the morning, remove from the freezer and discard the cling film. Using a sharp, heavy knife* cut into pieces, and the bark should easily pop into the shapes you have cut when you pull out by the brown baking paper.
- Store loose in a freezer-safe container in the freezer until ready to use.
Notes
*I use Decaf coffee but use caffeinated if that works for you! It works just as well.
** You may wish to warm the knife in hot water to make this easier. I find I don’t always need to... especially when the weather is warm!
