Raspberry Chia Jam Bites

I generally stay away from viral and trending foods on social media. It’s just not my jam. (See what I did there?) I don’t feel creatively attached to the recipe, nor do feel like there’s anything I can add to make the recipe my own. It’s been done, and it’s been done well… that’s why it went viral, right? Now don’t get me wrong, these taste pretty darn good, but for the amount of effort? I’m not sure I’ll make these again, but am deeply motivated to develop a lazy girl version. However, the demand for how I tackled these is high! So here is the recipe as per Instagram consensus - enjoy !
Raspberry Chia Jam Bites
Ingredients
- 100g fresh raspberries
- 1.5 tsp chia seeds
- 1 tsp maple syrup
- 1 tsp almond meal
- 60g dark chocolate
- 1/2 tsp coconut oil
Instructions
- In a medium sized bowl place ingredients 1 through 4 and mash together until it becomes a jammy consistency.
- Place tablespoon sized drops of the raspberry mixture onto a baking paper lined tray and pop into the freezer for about half an hour.
- Melt the dark chocolate and coconut oil together until smooth and glossy.
- Take the frozen fruit pieces out of the freezer and drizzle over the dark chocolate individually until completely coated.
- Freeze for another hour. *
- Store in an airtight container in the freezer.
Notes
If you are serving these to guests, or if you just don't like the rustic shape, try cutting with a small round cookie cutter for a tidier shape. This is what I did on social media.
