Festive Baked Brie

The humble baked brie is life-changing stuff. Elevate that grazing board, nibbles station or simply share with friends… and good luck sticking to a Low FODMAP portion!!

Low FODMAP portion 40g

Ingredients

  • 110g wheel of brie
  • 1 tsp high quality honey
  • Garlic infused Extra Virgin Olive Oil, to drizzle
  • 1/2 TBSP dried cranberries
  • 1/2 TBSP crushed walnuts
  • 1/2 tsp of fresh thyme, stalk removed (any kind will do as long as its fresh)
  • Good pinch of table salt

Instructions

  1. Preheat oven to 180C (356C F) on fan bake.
  2. Unwrap your wheel of brie and score the top in a checkered pattern. Not too deep, just enough for the flavor to get in there.
  3. Place your cheese inside an overproof ramekin.
  4. Smear the cheese as evenly as possible with the honey, drizzle over the garlic infused EVOO, and top with a good pinch of table salt.
  5. Pop into the over uncovered for 10 minutes.
  6. Remove from the oven and evenly sprinkle over the cranberries, walnuts and thyme.
  7. Pop back into the oven for a further 5-10 minutes.
  8. Serve with pieces of Low FODMAP fruit toast for something extra special, wafer thins, or your favorite cracker.
