Collagen Cookie Dough Bites

Gluten Free, Lactose Free, Low FODMAP, No Onion or Garlic, Vegan, refined sugar free

These collagen cookie dough balls don’t last long in our household! They have that cookie-dough texture and flavor, but are safe to eat and not too sweet. You can substitute the chocolate for whichever is your favorite … mine just happens to be dark chocolate, so the darker the better I say!

Ingredients

  • 3/4 Cup almond meal
  • 1/4 Cup Adashiko Pure Collagen Powder *
  • 1/4 Cup smooth, no added salt peanut butter
  • 1/4 Cup maple syrup
  • 1/2 tsp vanilla paste/essence
  • 20g dark chocolate, chopped

Instructions

  1. Cover a dinner plate with baking paper and set aside.
  2. Place all ingredients together in a medium-sized mixing bowl and stir well until completely combined.
  3. Roll Tablespoon sized pieces of dough into balls, and place on the baking paper covered plate.
  4. Cover the plate with cling film and place in the fridge for at least 30 minutes to firm up.
  5. Store in an airtight container in the refrigerator for up to 10 days... if they last that long!
