Courgette Fritters

Gluten Free, Low FODMAP, Vegetarian

These fritters are requested every year by my family for Christmas brunch. We enjoy them all summer long eating seasonally, using the glut of courgettes from homegrown plants. They are great cooked on the BBQ, in burgers, with eggs… the possibilities are endless! I highly recommend using my homemade curry powder recipe for this - it really takes them to the next level with its fragrant spices.

Ingredients

  • 3 Cups grated courgette
  • 1 Cup spring onion tops, finely sliced
  • 1/2 Cup basil, finely sliced
  • 1 egg
  • 1/3 Cup Gluten Free self-raising flour
  • 1/3 Cup parmesan cheese
  • 1 1/2 tsp curry powder
  • 3 TBSP garlic infused extra virgin olive oil
  • 1/8 tsp table salt
  • good crack of freshly ground pepper

Instructions

  1. Place all ingredients together in a large bowl and stir until well combined.
  2. Heat a small amount of oil in a non-stick frying pan over a medium-high heat.
  3. Using a tablespoon, add spoonfuls of the mixture to the hot pan. Cook for 6-8 minutes each, turning once. Cook the fritters in batches so they are easier to handle and turn.

Notes

Serve with sweet chilli sauce
