Pumpkin and Kumara Collagen Soup

I am constantly trying to sneak supplements into my food and find easy ways to fortify the nutritional value of our households diet. This soup is not only great for your gut, high in antioxidants and vitamin A , but great for your skin, nails and hair too. Who would have thought a humble soup could be so good?

I find this recipe mood boosting and comforting throughout autumn and winter months, and I hope you do too!

Pumpkin and Kumara Collagen Soup

Pumpkin and Kumara Collagen Soup

Ingredients

  • 800g peeled Pumpkin, diced into rough 2 inch pieces
  • 450g peeled Orange Kumara (sweet potato), diced into rough 1 inch pieces
  • 3 x springs fresh sage (or 2 x tsp dried)*
  • 2 TBSP crushed ginger
  • 2 x vegetable or chicken stock cubes
  • 5 1/2 cups water
  • 4 TBSP Adashiko Pure Collagen Powder
  • 1 tsp ground nutmeg
  • 1/4 tsp ground pepper

Instructions

  1. Place the first 5 ingredients into a large saucepan.
  2. Cover vegetables with the water completely.
  3. Heat on high until water is boiling.
  4. Turn down to medium heat and stir in the Collagen powder. Simmer for 40 minutes.
  5. Check that your vegetables are completely cooked - they should be starting to fall apart to the touch.
  6. Remove the pot from the heat and using an immersion blender, blend the soup into a complete puree.
  7. Add ground nutmeg and ground pepper and blend until combined. Season to taste. **
  8. Serve hot with your favourite toppings and a chunk of bread! ***

Notes

*fresh sage is always best if you can get your hands on it from both a nutritional and flavor point of view... however dried is fine too! No judgement here.


** add more/less ground nutmeg and pepper depending on your preferences - season to your own tastes. Try adding a little, blending and tasting and repeating this process until its just right.


***My favourite topping combination is a dollop of greek yoghurt, crispy bacon bits, with lashings of fresh parsley on top... and toast soldiers or a bread roll to accompany.
