Macerated Strawberries

Gluten Free, Lactose Free, Low FODMAP, No Onion or Garlic, Vegetarian, Vegan

Real magic happens when strawberries are macerated. This simple technique can really elevate a dessert into a showstopper or can be that perfect little treat topping for yoghurt, ice cream, or even simply with a warmed piece of brownie - yum.

Low FODMAP portion 40g

Ingredients

  • 250g fresh strawberries
  • 3 tsp white/granular sugar
  • 2 oz or 55mls Spiced Rum*

Instructions

  1. Top your strawberries and slice into quarters, or slightly smaller if you are dealing with larger strawberries.
  2. Pop into an airtight container** and sprinkle over the sugar, and liquor, then mix gently together.
  3. Cover and refrigerate overnight.
  4. If you like, mash your strawberries gently with a steel potato masher for a little twist on this classic.

Notes

* if in elimination phase, to avoid FODMAP stacking of fructans use a good quality whisky, brandy, or vodka so you can have a little more at a time!

** I prefer using glass containers for this recipe to avoid staining plastics or residual smell, and it’s also easier to clean.
